Pumpkin Bars with Cream Cheese Icing

Preheat oven to 350º F

Bars Ingredients:

4 eggs

1-2/3 cups sugar

1 cup vegetable or canola oil

1 (15 oz) can pumpkin

2 cups flour

2 tsp. baking powder

2 tsp. cinnamon

1 tsp. baking soda

1 tsp. salt

Beat together eggs, sugar, oil, and pumpkin until light and fluffy.  Add flour, baking powder, cinnamon, baking soda and salt and mix thoroughly.  Pour into an ungreased 15 x 10 x 1 pan and back at 350º F for 25 minutes.  Cool and frost with cream cheese icing (recipe follows) and cut into bars.

Cream Cheese Icing:

3 oz. of cream cheese, softened

1/2 cup butter, softened

1 tsp. vanilla

2 cups powdered sugar

Cream together cream cheese and butter.  Add vanilla.  Add powdered sugar and mix well.  Ice bars.
