- 1-1/2 C Flour
- 1-1/4 C Sugar
- 1 t. baking soda
- 1 t. cinnamon or pumpkin pie spice
- 1/4 t. salt
- 2 eggs slightly beaten
- 1/2 c chopped pecans
- 1/2 c salad oil
- 1 c canned pumpkin
- Shift together dry ingredients. Add nuts and mix well, set aside.
- Combine remaining ingredients and add to the dry ingredients.
- Mix just enough to blend. Pour into a 9 x 5 x 3 inch greased and floured loaf pan. Bake at 350 F for 60-75 minutes
You can make these in the mini loaf pans, just cook them for less time, insert a toothpick, it should come out clean and then they are done.
