Pumpkin Bread

Ingredients

  • 1-1/2 C Flour
  • 1-1/4 C Sugar
  • 1 t. baking soda
  • 1 t. cinnamon or pumpkin pie spice
  • 1/4 t. salt
  • 2 eggs slightly beaten
  • 1/2 c chopped pecans
  • 1/2 c salad oil
  • 1 c canned pumpkin

Instructions

 

  1. Shift together dry ingredients. Add nuts and mix well, set aside.
  2. Combine remaining ingredients and add to the dry ingredients.
  3. Mix just enough to blend. Pour into a 9 x 5 x 3 inch greased and floured loaf pan. Bake at 350 F for 60-75 minutes

Notes

You can make these in the mini loaf pans, just cook them for less time, insert a toothpick, it should come out clean and then they are done.
