Yesterday was something. DH had an appt for a consult on his teeth and they ended up pulling three of them right then and there. I fixed this meatloaf and baked potatoes, so he’d have something soft to eat. I think this recipe is from Betty Crocker, with some adjustments, it’s really good. You could leave out the horseradish if you don’t like it. I add additional herbs, to perk it up. Sage, thyme, rosemary come to mind.
Meatloaf
- 1 lb ground beef
- 1 lb. ground pork (can use all beef if you like)
- 1-1/4 C dry bread crumbs and 1-1/2 C milk (or, you can tear 4 med slices of bread and use 1-1/4 C milk)
- 1-2 eggs beaten
- 1 small onion, minced (I usually soften this in the micro, I don’t like uncooked onion)
- 1 clove garlic, minced
- 1/2 t. salt (to taste)
- 1 heaping T horseradish
- 1 T Worcestershire sauce
- 1 T ketchup
- Herbs to taste
Mix all, spread in two ungreased loaf pans
Bake at 350° approximately 1-1/2 hour
Let rest, then slice and enjoy
