Herbal Potato Soup
Dee’s Potato Soup
1 cup celery & 1 cup sweet onion, chopped fine (cooked down a bit in olive oil)
1 clove garlic, minced, add after celery and onion are nearly done, don’t cook too long, will get bitter
6 -8 cups potatoes, peeled and cut into even size bite size pieces
Cover potatoes with water, bring to boil, add 2 tsp salt. Coook 20 minutes or until almost tender
Drain water, add the celery, onion and garlic to potatoes, Add 3 cups of milk, or half and half until the consistence is as you like it
Can be thickened with instant potatoes or cornstarch mixed with milk
Herbs – I use parsley, chives, season salt, soul seasoning, salt and pepper.
Cover simmer enjoy!
