I often get farm fresh eggs, but I found I had trouble peeling them when hard boiled, then I found this:

Hard Boiled Eggs in Pressure Cooker

  • Prep time: 10 min Cook time: 5 min
  • 8 - 10 Eggs (fill the bottom of a rack with the eggs, as many as will fit in a single layer)
  • 1 cup water
  • pressure cooker or instant pot

  1. Pour the water into the pot, place eggs in steamer basket or rack.  then close the top, leave cock open bring to pressure approx 5 minutes then close and bring to 5 for 5 minutes, then take off stove and let cool got 6 minutes or until pressure is zero.  That's 15 minutes total.  Then put the pressure cooker under cool water, let pressure guage off, run cold water over eggs to stop the cooking process.  Very easy to peel!  Great for very fresh eggs.
